The Röstschmiede was born from the idea of roasting the best green coffee from fair trade and direct sources in small batches so that all the aromas of each individual bean can develop perfectly.

The Röstschmiede coffee roastery is located in the heart of Neu-Ulm in a former blacksmith's workshop with a long tradition. Individually and gently roasted in small batches, the coffee ensures very special taste moments.

Bei diesem Kaffee handelt es sich um die Varietät: Ombligon. Dies ist eine seltene Arabica Varietät, die sich durch ihre Komplexität von anderen Varietäten abhebt.
Geschmacklich finden wir hier viel Banane, Gold Kiwi und im Nachgeschmack eine reife Pomelo!
Die Arabica-Varietät Ombligon ist eine seltene und besondere Kaffeevarietät, die vor allem in Mittel- und Südamerika vorkommt. Sie zeichnet sich durch folgende Merkmale aus:
1. Seltenheit und Herkunft
•Ombligon ist keine der häufig kultivierten Varietäten wie Bourbon oder Typica, sondern gehört zu den weniger verbreiteten Linien.
2. Geschmacksprofil
•Typischerweise bietet sie eine außergewöhnliche Balance zwischen Süße, Säure und Körper.
•Ombligon wird meist in hohen Lagen angebaut, was zu einer langsamen Reifung der Bohnen führt. Das steigert die Dichte und die Komplexität des Geschmacks.
Angenehmer Filterkaffee im V60 (Rezept siehe unten) oder ein sehr süßlich, leichter Espressokaffee.

We mainly use varieties of the Arabica plant because we believe that this is reflected in the quality of the coffee.
TRANSPARENCY
You could call it direct import light - we mainly work with farmers who import through small import companies. We also import some directly. Paying the farmers above the world market price is a matter of course. In the long term, we are working on expanding our direct imports.
INDIVIDUALITY
We work exclusively, roasting small batches gently and freshly, and are happy to do so on a personal order. To ensure the best enjoyment, instruction from expert SCA baristas is provided.

The founders of Röstschmiede, Marius and Chantal, both hold the Barista Skills Professional certificate from the Specialty Coffee Association, or SCA for short.
Continuing education is particularly important to us, which is why we attend various training courses every year. The entire team is trained according to SCA standards. The courses are designed according to SCA standards.

In order to get the best out of the beans for you, we work with this machine in the cafe. The fine needle valve enables an extremely long pre-infusion (slow moistening of the coffee grounds) and this helps us to extract the finest aromas from the beans. The water from our osmosis system provides the perfect basic conditions for this.
V60 - Infusion in the Cafe
In the cafe we offer a V60 filter coffee. We grind the beans directly with the Comandante hand grinder. Whether you want a fruity or classic coffee is up to you, as it is prepared individually for you.
Best coffee enjoyment for you
We serve an espresso with a glass of water to neutralize the taste buds BEFORE enjoying the coffee. Afterwards, you will have a wonderful coffee taste that won't leave your tongue.
