Ulm Zoo Charity Coffee

About three weeks ago we were in the Ulm Zoo for private pleasure and then in the tropical house near the monkeys we discovered a very large coffee bush of the genus Coffea Arabica covered in red cherries:

The different stages of ripeness are easy to see, but most of them were already perfectly red and ripe. Back home, our heads were racing and we had the idea of ​​making a small charity coffee with the proceeds going to the animals. The advantage for us is that we can see the cherries up close from the harvest to the cup. Every coffee roaster's dream. No sooner said than done.
Suanne Münst, a gardener at the Tiergarten, harvested the cherries from the almost five-year-old bush and the almost 1.3kg then landed directly in our roasting forge.
If that doesn’t look good enough to eat!

Some cherries contained pearl beans (natural mutation), and twice even three beans. Normally you find two beans lying next to each other in one cherry. We laboriously pulped them by hand in about 1 1/2 hours, removing the outer shells from which cascara, or coffee cherry tea, will later be made. Now both separated products can ferment and dry in our café. The coffee will then be a 'honey processed', a slightly sweet coffee. In about 2 weeks, i.e. mid-March, the parchment shell, a protective layer, will be removed. We will keep you updated!

The current bid will be posted online and on site, we and the Ulm Zoo are very pleased about the high level of participation 🐒🐟

Final bid: 600,00€ + 400,00€ Röstschmiede

The auction will consist of a set consisting of:

- approx. 200-300g Ulm coffee

- Coffee cherries, “Cascara”, which are brewed as a caffeinated tea drink

-Tasting in the roastery, on request with exactly this coffee and cherries for up to 7 people (value: 343€)
