Finca La Joya – Farmer: Juan Carlos. At 40, Juan Carlos is a relatively young farmer. He is married and has a small family and lives in Marcala, where he was born and grew up. Years ago he emigrated to the USA alone to try his luck there. However, he returned to his village after seven years and has been earning his living growing coffee ever since. He inherited the farm from his father, on which he had already worked as a teenager. On an area of approx. 3.4 hectares, he has planted mainly coffee plants of the Pache variety and employs between 3-5 permanent workers. At harvest time he employs up to 30 harvest workers. The coffee plants get their very important shade from avocado trees, pine trees, peach trees, guamo trees, and sweetgum trees, among others. The finca is at an altitude of approx. 1650 meters.
Recommendation for preparation as cold brew: 100g coarsely ground coffee to 1 litre of water or 60g/litre in the V60 and brewed directly on ice.
